PENCIL ASPARAGUS WITH BUTTER & PISTACHIOS

Asparagus, scientifically known as Asparagus officinalis, is a flowering plant that belongs to the lily family. The vegetable’s vibrant, slightly earthy flavour is merely one of the many reasons it is so popular.

Ingredients

700 grams of pencil asparagus

4 tbsp unsalted butter

½ cup pistachios finely chopped

Zest and juice of 1 lemon

Flaky salt

Method

In a large skillet with a lid bring 1.5 cups of water to a boil on high heat. Add a pinch of salt

Once the water is boiling, add the asparagus and cover. Boil for 2 mins

Take out the asparagus and lay it out on a kitchen towel

Take another skillet and heat the butter in it

Add the pistachios and heat them for 30 seconds

Add the asparagus to the skillet along with the lemon zest and juice 

Transfer to a serving platter and add some flaky salt to taste
